Wildfire was born out of Chef Paul Parillo's desire to travel. After several food-inspired journeys through the U.S. gulf coast, Spain, Italy and Mexico, Paul felt compelled to bring the traditional street foods of those regions to upstate NY. Equipped with a giant wood-fired rotisserie smoker and a huge appetite for BBQ, tacos and po' boys, Wildfire typically roams through Hudson, NY and Columbia and Greene Counties for lunch, festivals and private events.
